Cooling Inflammation with Food The best defense against inflammation, experts say, is diet. Anti-inflammatory foods contain compounds that can prevent or decrease inflammation, thereby reducingthe risk of degenerative disease. You will learn the difference between pro- and anti-inflammatory foods and the best food preparation techniques. Sample Birgitte’s recipes that help boost your health and support your metabolism to prevent inflammation, suchas Wilted Winter Greens with Ginger and Shiitake Mushrooms; Broccoli, Orange and Greens with Orange Dijon Dressing; and Balsamic Beets with Fennel, Quinoa, Red Onions and Pumpkin Seeds. In this hands-on class, learn how to make fresh, spreadable cheeses such as Chevre, Ricotta, Fromage Blanc and Yogurt cheese. We will customize our cheeses with savory herbs and sweet spices, then enjoy a cheese tasting at the end of class.
