Beginning Cheese Making - Only one spot available.

Making your own cheese is easy and fun. In this workshop you will learn how to make fresh chevre, fromage blanc, ricotta, paneer, and yogurt cheese. I'll show you how to customize the cheeses by incorporating fresh herbs, peppercorns and other spices. You will receive the recipes, detailed instructions, abundant samples and cheese culture you can take home so you can start making your handcrafted cheese right away!

Cooling Inflammation with Food

The best defense against inflammation, experts say, is your diet. Anti-inflammatory foods contain compounds that can prevent or decrease inflammation, thereby reducing the risk of degenerative disease. You will learn the difference between pro- and anti-inflammatory foods, and the best food preparation techniques. Sample some of Birgitte’s delicious recipes that help boost your health and support your metabolism to prevent inflammation, such as Spring Vegetable Salad; Curried Vegetable Stew; Green Beans with Quinoa and Fresh Herbs; Fruit Salad with Coconut Vanilla Crème; and Thai Green Curried Coconut Tempeh. Healthy Eating for Busy People, Monday, June 28th, Spartan Gym Kitchen, Shoreline.

When schedules are busy and life is hectic it’s not always easy to make healthy eating a priority. However, when our bodies are fueled with good nutrition it’s easier to cope with stress and have energy to be active throughout the day. In this class, learn easy ways to make healthy eating convenient and timesaving.  Learn new cooking and shopping shortcuts while sampling delicious recipes such as:  Black Bean and Yam Quesadillas; California Quinoa Salad; Pasta with Sun-Dried Tomatoes; Artichoke Hearts & Feta; and Mexican-Style Wraps.

In-home classes

If you have a group of friends that would like to put together a customized class, I do in-home classes that are really fun and informative. The minimum number of people required is 5. I do classes for moms of preschoolers and older children, eating for menopause, healthy desserts, freezer cooking, detox – you name it. I bring the food and handouts, you supply the kitchen and beverages. This summer I will begin offering special topic classes in my home as well, such as cheese making – and perhaps themed classes. If you have any great ideas, please email me with your suggestions! And if you want to put together your own private class, send me an email and I’ll give you the details.
